Gas mark conversion chart
Gas mark 4 is 180°C in a conventional oven, 160°C in a fan oven and 350°F. Each gas mark from 1 to 9 is 25°F hotter than the one before, and a fan oven needs about 20°C less than a conventional one. The chart below covers every setting from gas mark ¼ to 9.

Conventional means an electric oven without the fan. Gas marks 1 to 9 follow Delia Smith's chart; ¼ and ½ follow Waitrose's.

Converting a fan temperature to gas
Add 20°C to the fan temperature first, then read across. A recipe that says 180°C fan means 200°C conventional, which is gas mark 6.
Gas mark 3 varies
Most charts agree on every setting except gas mark 3, which is listed as 170°C by Delia Smith and 160°C by Waitrose. 325°F is 163°C, right between the two.
