What is gas mark 4 in Celsius?

180°C in a conventional oven, 160°C in a fan oven, and 350°F.

What gas mark is 200°C?

Gas mark 6. If the recipe says 200°C fan, that matches 220°C conventional, which is gas mark 7.

What is 180°C fan in gas mark?

Gas mark 6. Add 20°C to a fan temperature to get the conventional one, then read across the chart: 180°C fan is 200°C conventional.

Why do fan ovens need a lower temperature?

The fan moves hot air around the food, so it cooks faster than in a still oven. Delia Smith's advice is to take 20°C off conventional temperatures, or follow your oven's handbook.

Why do different charts give different figures for gas mark 3?

Gas mark 3 is 325°F, which is 163°C exactly. Some charts round it to 170°C, including Delia Smith's, and others to 160°C, including Waitrose's. Either works for most recipes.
