Conventional or fan?
UK recipes often give two figures, such as 200°C or 180°C fan. If yours just says 210°C, it usually means a conventional oven, so a fan oven should be set to 190°C and a gas oven to just over gas mark 6.
Exact conversion
210°C × 9 ÷ 5 + 32 = 410°F. The closest gas mark on the chart is gas mark 6, which is 200°C and 400°F.
What cooks at 210°C
Gas mark 6 is a hot oven, the usual setting for roast chicken, pastry and oven chips. The settings either side are gas mark 5 (190°C, 375°F) and gas mark 7 (220°C, 425°F).
Between two gas marks
210°C falls between two settings on the chart. Gas ovens have hotter and cooler zones, so for a cake use the lower mark on the middle shelf, and for roasting use the higher mark.
