Conventional or fan?

UK recipes often give two figures, such as 200°C or 180°C fan. If yours just says 130°C, it usually means a conventional oven, so a fan oven should be set to 110°C and a gas oven to just under gas mark 1.

Exact conversion

130°C × 9 ÷ 5 + 32 = 266°F. The closest gas mark on the chart is gas mark 1, which is 140°C and 275°F.

What cooks at 130°C

Gas mark 1 is a very low oven, the usual setting for slow-cooked stews and rich fruit cakes such as Christmas cake. The settings either side are gas mark ½ (120°C, 250°F) and gas mark 2 (150°C, 300°F).

Between two gas marks

130°C falls between two settings on the chart. Gas ovens have hotter and cooler zones, so for a cake use the lower mark on the middle shelf, and for roasting use the higher mark.

Sources and assumptions

  • Conventional means an electric oven with the fan off. Fan settings are 20°C lower.
  • Recipe charts round temperatures to the nearest 10°C or 25°F, so exact conversions differ by a few degrees.

Ovens vary. An oven thermometer shows what yours is really doing.
